6-10 dates (depending on size), soaked if necessary<br />
1/2 teaspoon of vanilla<br />
4 heaping tablespoons cocoa<br />
1/2 cup water<br />
<br />
Place the avocado, dates, vanilla, and cocoa in a food processor and begin to blend. Drizzle in the water, stoppping to scrape the sides of the bowl if need be, until the mixture resembles a thick chocolate pudding. Let it continue mixing until smooth and creamy.<br />

It is so refreshing!<br />

1 avocado<br />
1 cup of packed spinach<br />
1 cup of non-dairy milk (I use Silk Almond)<br />
2 Tbsp of fresh mint leaves<br />
1 1/2 cups of ice<br />
1/2 tsp of peppermint extract ( I like Simply Organic brand, alcohol free)<br />
20-25 drops of stevia liquid or agave<br />
<br />
Throw it all in the blender and tada! You have a nice cold, refreshing, minty "milk" shake. Love it! <br />

Plus, all my friends are "blogging" so I might as well give it a shot, right? I have been a vegan for a little over a year now. I was a vegetarian for 5+ years, with a short intermission of salmon and chicken cravings while I was pregnant.<br />

Hopefully some of you, vegan or not, try and enjoy the recipes I post. <span class="fullpost"> Increasingly, folks everywhere are experimenting with vegan food and they are curious to learn more. I was once a vegan newbie too.
