Chocomole Dessert

1 ripe avocado, pitted
6-10 dates (depending on size), soaked if necessary
1/2 teaspoon of vanilla
4 heaping tablespoons cocoa
1/2 cup water

Place the avocado, dates, vanilla, and cocoa in a food processor and begin to blend. Drizzle in the water, stoppping to scrape the sides of the bowl if need be, until the mixture resembles a thick chocolate pudding. Let it continue mixing until smooth and creamy.


 Brody is not too sure about it. Going in for the first bite...



 Definitely delicious!

shamROCK shake!

Move over McDonald's! Now we don't have to wait until March to get our hands on a Shamrock Shake. 

These ingredients might seem a bit random to you, but I promise the mint smooths it all out and you do not taste the avocado or spinach. It is so refreshing!

1 avocado
1 cup of packed spinach
1 cup of non-dairy milk (I use Silk Almond)
2 Tbsp of fresh mint leaves
1 1/2 cups of ice
1/2 tsp of peppermint extract ( I like Simply Organic brand, alcohol free)
20-25 drops of stevia liquid or agave

Throw it all in the blender and tada! You have a nice cold, refreshing, minty "milk" shake. Love it!

Brody, my son, is highly allergic to dairy. So everything I make, he loves to try. He's definitely mommy's little taste tester.

A new beginning...

I have finally figured out where to store all of my recipes so I don't lose! Plus, all my friends are "blogging" so I might as well give it a shot, right? I have been a vegan for a little over a year now. I was a vegetarian for 5+ years, with a short intermission of salmon and chicken cravings while I was pregnant.

Hopefully some of you, vegan or not, try and enjoy the recipes I post. Increasingly, folks everywhere are experimenting with vegan food and they are curious to learn more. I was once a vegan newbie too. If you are wanting to experiment with a few vegan recipes, but not yet ready to commit to the sometimes painstaking (always rewarding) lifestyle of being vegan, this is a great place to start. Enjoy!
